7 Make It A Date 05/12: May

I found a Groupon deal for our putt-putt place, so we ended up using the cash in the packet on a bonus lunch date earlier in the month :D I don't have any pictures of that date.. but you know us - we definitely enjoyed ourselves!

When I was putting this packet together in December, I felt about an ounce of apprehension about the dares. Some of them were so silly! I wasn't sure we would want to do them, especially if there were too many people around. Thankfully, we were the only ones on the course for most of our game.. so we didn't have to worry about slowing other people down or getting too embarrassed by the dares :P And none of the dares were that bad. We ended up tying the holes I was apprehensive about anyway, and we didn't have to do them. That worked out well! (for example: while I love kissing my husband, I'm definitely not comfortable kissing him for a full minute out in public for all to see...)

In the end, Josh won by three strokes. I was surprised that I stayed so close to him throughout the game.. usually I'm terrible. But I managed to hang in there!

Next, we hit up the go karts.. and we rode together in a double-seater because it was more fun that way :) We were the only car on the track!

On the way out, we decided to take a quick spin in the lobby arcade. Not surprisingly, Josh schooled me at air hockey (I wish I could at least claim both the points I was awarded.. the first was an accident!)


But I did beat him at skee ball by like 600 points. It's not much, BUT I'LL TAKE IT.

Josh and I hadn't gone putt-putting since shortly after we started dating, so it was fun to relive those early dating days! On our way to Olive Garden, we reminisced about our first few months together and listened to an old mix tape I'd given Josh for our first Christmas together. Appropriate for the most recent Christmas gift to him, right? We also talked about Backyard Survivor because that's pretty much all Josh thinks about these days :P He's so fun and creative. It was a good time.


For lunch at Olive Garden, I got the bottomless soup/salad/breadsticks deal. (Their salad is amazing!) Josh ordered a pepperoni/bell pepper/sausage/roma tomato pizza and he ate the entire thing. We were both pretty surprised! That was on top of the salad and breadsticks he'd already consumed before the pizza came out!

If you've seen today's Messy Mondays video already, you might recognize our outfits.. that's because after our date, we went over to the Taylor's and shot "#YOLO? Well, #YODO too, buddy." It was hilarious.. Josh as the skater dude had us laughing harder than I think we ever have during a shoot.

All together, it was a pretty awesome day :) I can't wait for Friday to get here so we can open the June date envelope!

3 Parmesan Kale and Broccoli Pasta with Sun Dried Tomatoes

This recipe came about because I had a bunch of kale, four leeks, and two heads of broccoli that were all starting to look a little wilty. I needed a dinner that would use all these up without tasting like a bunch of broccoli and kale (let's just say there's a reason those were the leftovers from last week's CSA share :p ). Thankfully, kale and broccoli are two vegetables that taste completely different when they're lightly cooked - with a little steam, bitter becomes slightly sweet; bland becomes savory. It's amazing what a little heat and some water can do! 

A big helping of this is sufficient as a full meal for me, but it would also make a great side dish to some baked chicken and a light romaine salad. Or you could just add the chicken right into the pot! I also imagine that this would taste good with sausage or pepperoni. That would be super easy to do - just cook your meat like normal and then stir it in with the pasta at the end. 


I ended up adding in more sun-dried tomatoes after I'd taken these photos because I really liked the taste they brought to the dish. The recipe below accounts for that addition, but feel free to up the tomatoes even more if you'd like.

Makes 6 side servings (or 4 main servings)
5 minutes prep; 25 minutes cooking time. 30 minutes total. 
  • 2 tbsp olive oil
  • 2 tbsp minced garlic
  • 4 leeks (or 1/2 medium onion), diced
  • 1 big bunch kale (stems removed, leaves torn into medium sized pieces) 
  • 2 heads broccoli, cut to short florets
  • 1 bag of frozen peas and carrots
  • 1/2 c water
  • 8 oz bow tie pasta
  • 2 tbsp lemon juice (one medium lemon)
  • 1/3 c sun dried tomatoes, cut into strips
  • 3 oz shredded parmesan cheese
  • salt and pepper, to taste
1. Heat olive oil in a large pot over medium high heat. Add onion and garlic, and sauté until soft. Add kale, broccoli, peas&carrots, and 1/2 c water to pot. Stir once, then cover, reduce heat to medium/low, and let cook for 15 minutes. 

2. While vegetables are cooking, prepare your pasta according to instructions (usually 10-15 minutes after water has started boiling - check package for instructions). (Note: this recipe only calls for 8 oz, while most pastas come in 16 oz packages. Don't use the whole package unless you intend to double the rest of the ingredients, too.)

3. When kale and broccoli are tender but still vibrant in color, add drained pasta, sun dried tomatoes, lemon juice, parmesan cheese, and salt/pepper to taste. Mix well and serve warm.

I hesitantly combined two untested recipes in order to use up the kale and broccoli leftover from last week.. and it tastes sooo good. I'm pretty proud of the end result!

I threw in a few extra ingredients for good measure, so it isn't close enough to either recipe for me to share the links. Maybe I'll do a recipe post in the next couple of days - is that something any of you would be interested in seeing?

10 Currently Digging

Campfires
I love the smell of a campfire. We've already been to several bonfires this year thanks to the MacDonalds and their old tree that went down in December, but now we've got a fire pit a little closer to home and we've been taking advantage of it lately.  Jordan and Ray built a really nice fire pit for Momma Laurie's Mother's Day gift, complete with rustic wooden benches and a walkway lined with rope lights. We've enjoyed it twice since Mother's Day. A couple nights ago, we played a killer game of Survivor around the campfire. Speaking of..





Backyard Survivor

This. Was. So. Much. Fun. Josh came up with the idea months ago, but only recently have we put it into practice. We'd played twice before, but last night was the first time that a group of people got together with the express purpose of playing Survivor. Barry was our Jeff Probst, and he split us into two "tribes" to compete against each other until the merge, when it became every-man-for-himself. There was a hidden immunity idol (a ketchup bottle), a fire-building challenge, alliances and backstabbing, double eliminations and multiple twists. They made for a great game. I made it to top 5, Josh made it to top 3, and little Madeline took the $5 Starbucks gift card prize home. I don't really know how to adequately describe the experience.. just know that it was a stinkin' blast.

Local Strawberries
There is nothing better than fresh, local strawberries in season. Okay, so this picture was ripped from my instagram feed, taken two weeks ago - before our CSA started - so those aren't actually local berries. But I think it illustrates the point beautifully. I thought those strawberries were good, and they were from the supermarket. But our farmer has given us a generous portion of strawberries the last couple of weeks, and nothing can compare to the heavenly sweetness of perfectly ripe strawberries. I seriously wish they could last forever. At the very least, I hope we get a few more weeks of them. So, so good. 




The Wonder Years

Josh and I have been watching The Wonder Years on Netflix. It's so good. Every episode mixes a good bit of humor with a gentle longing for the simpler times of the (wait for it) wonder years of youth. Most episodes don't end with a neat bow wrapped around them - The Wonder Years plays out a lot more like real life than most shows. Not to mention little Fred Savage! I'll always feel closer to Ben because of Boy Meets World, but those brothers sure are lovable, aren't they?

Stir-Fry
So easy. So versatile. So veggielicious. We eat stir fry at least twice a week, and usually more.

Re-Reading Childhood Favorites
A few days ago, I got the urge to start the Anne of Green Gables series over again. Josh got The Gospel According to Larry from the library and has been reading it aloud to me - we're only in the second or third chapter, but I am so intrigued already! Then, on Sunday we went to McKay Used Books, where I found a copy of The Witch of Blackbird Pond for a buck fifty. (I finished that this morning - such a good book!) I didn't intend to start a books-we-grew-up-with kick, but I'm certainly enjoying it now that I'm in the middle of it!

8 Introducing Jared and Anna Snyder!

What an amazing, exhausting, romantic, and exciting day!

Long story short, I ended up helping shoot the whole wedding... not just the girls-getting-ready portion. I'm slap-dab-wore-out! But I had a great time. I almost can't believe how much fun I had pretending to be a wedding photographer. Thankfully, I wasn't entirely responsible to catch every important moment. A mutual friend of ours is a fashion photographer, so he was taking pictures as well (and he had pro equipment! That took the pressure off for me because I'm poorly equipped on my own).

I have a ton of pictures to go through, but I wanted to share one image that jumped out to me during my initial scan-through:


Jared chose not to see Anna before her walk down the aisle, but they wanted to pray together before the ceremony. So Jared positioned himself at this corner with his hand stretched out, waiting patiently for his bride to join him. Soon after, Anna snuck up and grabbed his hand, and his entire countenance changed. It was adorable. As they held hands around the corner, Jared praised God for this day, their journey here, and their future together. It was very touching! I'm tearing up a little just thinking about it. What a lovely couple.

My heart is overflowing with happiness for them.

Congratulations to the brand-new Mr. and Mrs. Snyder!

4 The Day Before the Wedding

Two of our very dear friends are getting married tomorrow! This is the wedding that Josh is best man in and I'm helping out with the "girls getting ready" pictures. This wedding is really cool - Jared and Anna have friends or family members taking care of almost every part of the wedding. Not only is that a wise choice financially, but it's really cool for us friends who get to be a part of their big day :)

So we spent most of today helping get ready for that - starting with an early rehearsal, followed by brunch.. then they rehearsed some more, then set up for the reception.


While our husbands were setting things up for the wedding, Emily and I left to get the flowers (she's in charge of the bouquets, corsages, and boutonnieres). Getting them from Kroger to her house was quite the adventure! I had to make sure the three buckets of cold water and flowers didn't spill.. I was up to my ears in baby's breath. Thankfully, we reached her house without any spills! Then she taught me how to make boutonnieres.


While I was helping Em with the roses, I remembered that today is Friday.. as in, the day we pick up our CSA. Thankfully, Josh and I still had time at that point to drop by and pick up our second CSA share of the season. I'm still so excited about this program! I can't remember exactly what we got this week, but I'm happy to see more strawberries; and the addition of cabbage, broccoli, and onions has me excited to meal plan. 


We were going to shoot Monday's video tonight, but we were both way too tired. We went on a date instead - we tried Which Wich for the first time and it was DELICIOUS. Now we're at home, chilling. Josh is putting the finishing touches on the script, but once he's done, I'm going to try to convince him to let me read a few chapters of Catching Fire out loud tonight. Cross your fingers!

4 Mid-May Progress Report

I've been dreading this mid-month check-in. 

When I set this month's resolutions, I thought I'd be able to keep up with them while also giving myself a break. Turns out, I needed even more of a break than all that. Josh and I both got sick the first weekend of May - I think our bodies were telling us to slow down. We're both better now, but my energy level isn't back to normal yet..  Enough with the excuses, though. Let's dig right in.

Laundry/Dishes
As I type this, there's a pile of folded laundry at my feet, waiting to be put away for two days. The kitchen sink is full of dirty dishes, the stovetop is dirty, the washer and dryer are full, and the dining room table is a cluttered mess. (Okay, so I typed that yesterday. As of today, most of the laundry is put away, the dishes are done, the stovetop was clean before dinner, annnnd the dining room is still a mess. Yay!)

Using my DSLR Camera More
I haven't used my DSLR too much his month, but right now I'm OK with that. This weekend, I'm helping take some pre-wedding photos at our friends' wedding, so I'm hoping that'll help get me back into the saddle again.

Complete and Submit Social Security Paperwork
I haven't even made an effort. For shame.

Get Some Art on the Walls
Finally! Something I've done! There's still a small pile of frames to hang, but at least I've started. Of course, I'll share pictures with you guys in my end-of-the-month Report Card.

10:30 Internet Curfew
I've done OK with my internet curfew (It's been more like 10:45ish the last few nights), but we've had so many late nights out recently that I'm not really reaping the benefits I was hoping to reap because of it. An unexpected side effect is that I'm actually spending less time on the internet during the day, as well. I guess that's why the blog has been a bit neglected.. but don't worry, I'm working on a few posts to share with y'all in the near future. :)

Read at Least Three Books
I've finished Blink (that one's for my book club so I read it as quick as I could). Reading Catching Fire with Josh is still at a stand-still. That one's not my fault though. Just today I was asking Josh why he isn't motivated to finish it, and he said, "Because it might not live up to my expectations. At least this way, I have a really good picture of how I want it to go." This, coming from a man in the FIFTH CHAPTER. He hasn't even reached the good stuff yet. As for the medical book, I'm working on it. It's very information-heavy and takes a lot of breaks to soak it all in. This one may not be finished by the end of May, but I'd rather not rush it - I'm learning a lot! Maybe I'll replace it on the May list with another book so I can meet my 3-book goal.

A Note:
While eating healthy wasn't one of my express resolutions this month, it's an ongoing goal, so I feel like I'm at least a little accountable to you guys.. I've been a little lax in my eating habits recently. Worst time to do so - when I'm sick - but there it is. Several parties, birthdays, Mothers' Day, the first DELICIOUS s'more I've had in years.. I've indulged a bit much. I've been drinking extra green smoothies in an attempt to reverse any damage caused by the sugar. Thankfully, other than a dip in energy, I haven't felt any big repercussions. Praise the Lord!

16 A Day in the Life

Hello, friends! We are recuperating after a week of sickness in our house. It's just that time of year, I guess. On the bright side, we've finally ironed out the kinks for my email address, so send away! If you sent an email in the past week or so but haven't received a reply, please try again! kelli@blimeycow.com (that's K-E-L-L-I -- make sure you spell it right or it gets lost in the void!)

Now that that's out of the way.. Do you guys remember Kirbyeveryday? Once a week, Kirby and Sara make a video chronicling their daily happenings as interns for an after-school program. They're hilarious.

Well, I decided to make my own "everyday" video, and I wanted to share it with y'all:

Call it an homage to my beautiful friend, Kirby. She's leaving us this weekend (saaaaaad!), but I got it edited just in time to share it with her in person. 

On a related note, tonight we're celebrating 5,000 views on Kirby and Sara's first everyday video! I'm so excited to hang out with her once more before she heads back home. (We love you, Kirby!)

-Josh left early to help a friend move on that day - that's why he's not there when I wake up.

30. Something That Makes You Sad but was also kind of awesome: blimeycow.com got so much traffic when we announced the limited-time-only bumper stickers, that it crashed for a few minutes. Irritating and exciting all at the same time, haha.
